This is a recipe that a friend made for me on a recent trip to Ontario. The walnut "meat" was so savoury and satisfying, and I like the taste more than soy meat products. Not that there is anything at all wrong with those, but I feel better when I consume soy in moderation.

Walnuts are an amazing food, providing more than 100 % of the daily recommended plant-based omega-3 fats; they contain unique powerful antioxidants, help with weight control and support brain health! 

This walnut meat recipe is also 100% raw as well as gluten free.

For your walnut meat you will need:

  • 1 cup walnuts
  • 1 Tbsp olive oil
  • 1 Tbsp tamari or soy sauce
  • 1 tsp oregano
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 tsp salt
  • 1/8 tsp cayenne

Pulse your walnuts in a food processor or blender until the largest chunks of nuts are smooth, not to a liquid consistency though, since we still want to enjoy some meat like chunky texture. 

Once walnut meat is processed, mix in all other ingredients in a bowl and let sit in the fridge for as long as possible. You can eat it right away, but I find it tastes better when all the ingredients have had some time to mingle. 

Buy any taco shells you choose (hard or soft). I bought corn tortillas because I enjoy how fresh they taste. Also be careful, a lot of store bought taco shells and wraps have a ton of unnecessary ingredients. Corn taco shells have much less.

I cut up some yellow bell peppers and onions, and dressed them with guacamole, salsa and a sprinkle of vegan shredded cheese!

One other quick thing to note, is that these tacos travel extremely well. We went on a road trip to Drumheller and ate them picnic style and believe it or not, they were perfect for the outdoors
