Good afternoon and welcome to my first recipe with ‘The Vibrant Vegan’! Today we are starting with an easy food- SANDWICHES!
I can't fully explain how or why I love sandwiches so much, I just do! And now that I have found my ultimate all-veggie sandwich (that is warm, savoury and truly satisfying) I need to pass this creation onto you!

I think one of the most (if not the most important part) of any sandwich is great bread. When I am searching for bread, I start with local sources, I try to keep my purchases to bread made in Alberta and if not that, then at least made in Canada! #SupportLocal

My favourite bread right now is spelt bread (found at most health food and organic food stores) freshly baked and ready to eat! Spelt is a good source of fiber, which helps to slow down digestion and absorption and high fiber intake is linked with reducing your risks for heart disease, type 2 Diabetes and obesity.

If I am going to eat bread, I want to make sure I am picking the healthiest whole grain options to maximise the health benefits. The next step is getting all of your favourite vegetables together.


After MANY MANY sandwich attempts, I believe THIS is the magical combination

-       Spinach or baby kale

-       Green olives (sliced)

-       Red onions (sliced thinly)

-       Carrots (grated)

-       Dill pickles (sliced)

-       Sprouts

-       Banana peppers

-       Guacamole

-       Cucumbers (sliced thinly)

-       Mustard

 

Now what sets this apart from other sandwiches is the step that comes next. You take that pile of delicious whole food goodness, put it on a piece of parchment paper on a baking sheet and into the oven. Broil for 4-5 minutes.

I am telling you, heating up the veggies before placing them onto my toasted bread has CHANGED MY LIFE. And I think it’ll change yours too. And you can skip all the preservatives, additives and harmful chemicals that often come along with fast food or convenience sandwiches.

Whatever you do, add or subtract any ingredients to suit your personal tastes, there is no right or wrong in the land of sandwiches. Without the meat and cheese (which frankly is obsolete with all these delicious flavours thrown together), once you take a bite of this delicious and warm vegan treat, I guarantee you’ll never look at sandwiches the same again.
