As the weather starts to get (slightly) colder, I find myself craving those classic winter meals. I KNOW I KNOW, we are far off from winter yet, but something about the changing of the seasons makes me crave recipes like this.
This is so easy to make and is great as a large meal, throw it all in the crock pot and come back to delicious and nutritious meal the entire family can enjoy!
What you will need
- 7 large tomatoes, diced
- 1 large onion, diced finely
- 2 cups mushrooms, diced finely
- 1 bell pepper, diced
- 1 cup uncooked quinoa
- 4-5 cups of water
- ½ package low sodium chili seasoning
- 1 can no salt added beans beans (any kind you like, I used white kidney beans)
- 1 can tomato paste
Put all your ingredients in the slow cooker on low setting for 8 hours. Check occasionally to ensure mixture isn’t drying out. Add more water as needed.
THAT’S IT! Just that easy. The quinoa cooks along with all the other ingredients and this makes a big batch, perfect for family dinner!
Might not be the most photographically pretty meal in the world haha but it tastes amazing!!
