Sometimes in life, we just need comfort food. And I know a lot of vegans struggle with finding version of their childhood favourites (since most of us were not born vegan). This is my favourite Mac N Cheez recipe, it is savoury and delicious, and so so simple.
Mac N Cheez
In a fry pan:
- 2 tbsp of olive oil
- 1/2 white onion, diced
- 1/2 jalapeno, diced (if you don't like spice, omit this ingredient)
- 1 cup raw cashews
- 1 clove garlic
Sautee until onions and cashews have begun to soften, set aside
In a blender
- 1 1/4 cup water
- 1/2 cup nutritional yeast
- 1 tsp paprika, tumeric, mustard powder
- 1/2 tsp nutmeg and pepper
- 1 tbsp salt
Pour sauce over 1 lb of cooked pasta of your choice. (I used quinoa amarath pasta bought at Costco). Bake at 350 for 30 minutes
*You can add breadcrumbs on top for added crunch*
I enjoy pasta but I usually try to minimize the amount I eat in a sitting by serving it with some kind of veggie. Today I picked steamed brocolli, I find they go extremely well together.
