Lately I have been trying out different types of pasta noodles, in an attempt to find a delicious and nutritious alternative to whole wheat pasta. I haven't eaten white pasta in years, like white bread, it is often over processed and nutrient deficient so avoid it whenever you can!

That being said, I had heard many bloggers taking about this black bean pasta (available at Costco) and I was intrigued to try it. I have to say, I am very VERY impressed! Not only is it aesthetically intriguing but it is delicious, and I plan on using it many times in the future. Also, these noodles contain over 50% of your daily fiber value, 22g of protein, is organic, non-GMO and gluten-free.

What you will need

-       1 box of black bean spaghetti (I only used about a ¼ of the box for this recipe)

-       1 can no salt added diced tomatoes

-       1 zucchini

-       1 yellow onion

-       1 container whole white mushrooms (halved)

-       1 tbsp garlic

-       1 can of lentils

-       chili powder (to your specific taste)

-       dash of salt

-       1 tbsp pepper

-       **any of the spices can be tweaked depending on your personal taste, I tend to just wing it**

Place all ingredients (except noodles) into slow cooker on low for 5-6 hours. Cook noodles according to box directions. Combine and enjoy
